Introducing the Ajikataya knife made by Mutsumi Hinoura, the fourth generation of the long-established blacksmith "Hinoura Knife Kobo" in Sanjo City, Niigata Prefecture.
Mr. Mutsumi Hinoura is the son of Mr. Tsukasa Hinoura, who is world-famous as an authority in the Sanjo cutlery world, and has inherited his father's knife making techniques that utilize scientific analysis. Pour it into this Ajikataya knife.
It is characterized by being hard to spill, easy to sharpen, and long-lasting sharpness. The blade is also forged and tapered, giving it a moderate weight.
*Mr. Mutsumi Hinoura left Hinoura Cutlery Workshop in 2025 and aims to further develop traditional Japanese knives and train successors. This product was produced at Hinoura Cutlery Workshop before he became independent, and is now out of production. We look forward to his future success and the many unique knives he creates with his unique ideas.
