"YOSHIKANE" Black Forged 105mm ajikiri Knife (thin deba knife) with roasted chestnut wood handle - Crafted by Tsuneo Yoshida old stock
This item was handcrafted by Tsuneo Yoshida, the predecessor of Yoshikane Knife Workshop in Sanjo City, Niigata Prefecture. Although he has retired, he was a renowned bladesmith in Sanjo known for his exceptional craftsmanship in forging traditional Japanese knives without using composite materials, employing traditional forge welding techniques. There's even a story that he dedicated his lunch breaks to forging these knives with a heartfelt desire to "deliver as many high-quality knives to the world as possible."
Even after his retirement, Tsuneo Yoshida's forging techniques continue to captivate numerous professional chefs and cutlery enthusiasts. His creations have become increasingly precious, and our stock is limited. Once this stock is depleted, the prospect of restocking is uncertain.
This time we will be introducing a ajikiri knife that is perfect for cutting small fish. Please experience the durable and easy-to-use roasted chestnut handle and traditional techniques.
