"YOSHIKANE" SKD steel 165mm Nakiri knife with hammered edges, magnolia wood + laminated reinforced wood handle, made by Tsuneo Yoshida, old stock
This item was handcrafted by Tsuneo Yoshida, the predecessor of Yoshikane Knife Workshop in Sanjo City, Niigata Prefecture. Although he has retired, he was a renowned bladesmith in Sanjo known for his exceptional craftsmanship in forging traditional Japanese knives without using composite materials, employing traditional forge welding techniques. There's even a story that he dedicated his lunch breaks to forging these knives with a heartfelt desire to "deliver as many high-quality knives to the world as possible."
Even after his retirement, Tsuneo Yoshida's forging techniques continue to captivate numerous professional chefs and cutlery enthusiasts. His creations have become increasingly precious, and our stock is limited. Once this stock is depleted, the prospect of restocking is uncertain.
This time, we will be introducing the 165mm Nakiri knife, which is well-known in Japan and is easy to cut vegetables. This knife is made of triple-layered steel with a stainless steel cladding, so you can feel the sharpness of the steel with relatively easy care, and the hammered pattern on the blade makes it an excellent knife.
